The question I often hear from those I train is, “Angela, I try to eat healthy but I’m too busy to cook. What foods should I be eating that will help me see the results I want to see, while also fitting it into my busy lifestyle?”

Chicken, kale, and sweet potato soup is a great recipe on colder days when stuck inside, especially given the sick season that we have found ourselves in. This soup is full of immune boosting ingredients, such as kale (packed with Vitamins A, C and K), sweet potatoes (rich in antioxidants that protect your body from free radicals), and chicken stock (rich in calcium, magnesium, and phosphorous). Not only is this delicious recipe excellent served fresh out of the slow cooker, but it also keeps it’s flavor and can be made in bulk and frozen for later!
Optional Modifications
Can replace chicken stock with bone broth, or add bone-in chicken.
Vegetarians can still get all health benefits by substituting chicken & chicken broth with miso or vegetable broth.
